Summary of Duties and Responsibilities

The Department of Dining at Iowa State University (ISU) seeks applicants for an Assistant Director of Catering. The Assistant Director of Catering will serve as a dynamic culinary food service manager, growing and leading a diverse fine dining catering, event planning, and business development team with anticipated annual sales growth. The Assistant Director of Catering will report directly to the Dining Director and will lead all catering operations, working closely with customers and staff to manage catering events from start to finish, from small refreshment services to large, high-profile VIP dinner events. This individual will be responsible for developing positive customer relationships and working with customers to build menus and plan their events in general. They will work with the scheduling of employees for all catering events, oversee setup and service, maintain appropriate food and labor costs and maintain catering equipment and wares. ISU Catering’s current revenue is approximately $1.3 million (M) a year and the primary goal of this position is to increase that revenue closer to $3M annually.

Required Education and Experience

Bachelor’s degree and 5 years of related experience; OR a Master’s degree and 3 years of related experience; OR a Ph.D. or other professional degree and related experience.

Bachelor’s or higher degree in Hotel, Restaurant and Institution Management, Culinary Arts, Dietetics, Food and Nutrition, Business or related degree.

Experience leading catering operations in large volume college, restaurant, or similar environment, including for high profile VIP dinner events.

Experience creating, developing, and exceeding sales and revenue goals for business.

Experience leading, retaining, and managing staff for large business or business unit.

Experience creating menus in large volume college dining, restaurant, or similar with focus on pricing, cost and labor control.

Experience in staff development in large volume business or food service operation including supervising, training, coaching, and disciplining.

Additional Information

The position can require extensive work exceeding 40 hours per week and during non-standard work time (hours before 8 a.m., after 5 p.m. and on weekends).
